Vegan Zucchini Pizza Crust

Ingredients
1 zucchini
3/4 cup of sunflower seeds
2 1/2 teaspoons of psyllium husk powder
1/2 teaspoon of dried oregano
1/2 teaspoon of dried thyme
1/2 teaspoon of dried basil
1/2 teaspoon of salt
1/4 teaspoon of garlic powder
1 1/2 tablespoons of nutritional yeast
Instructions
Preheat your oven to 350°F and line a baking sheet with parchment paper. Spray the parchment paper with avocado or olive oil.
First, grate the zucchini and squeeze out the excess; then, pat it dry with a paper towel. It needs to be pretty dry.
In a food processor, grind the sunflower seeds until they resemble a fine powder. Transfer to a large bowl and add the psyllium husk powder.
Mix all the herbs, nutritional yeast, and salt, then add them to the bowl and mix until thoroughly combined.
Add the mixture to the grated zucchini and, using a large wooden spoon, mix. Then gently mix and knead the dough with your hands until it forms a dough ball.
Spread the dough onto the baking sheet and bake it in the oven for about 10 - 15 minutes until the crust turns golden brown.
Remove from the oven and use your preferred sauce (such as pesto, buffalo, or marinara) and top it with your favorite toppings.
Bake for an additional 12 minutes, or until the toppings appear cooked and the vegan cheese has melted.
