Tofu Drumsticks:

1 block of Franklin Farm super firm tofu ( Super firm doesn’t need pressing, but other tofu will)

1 Pack of rice paper


Marinade:

3 tablespoons soy sauce or tamari

1 tablespoon olive oil (Bek uses Shiitake Mushroom Oil)

1 tablespoon nutritional yeast

1 tablespoon maple syrup

1 teaspoon Vegan Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon poultry seasoning (vegan)

½ teaspoon liquid smoke


Batter:

1 cup all-purpose flour

1 cup plant milk

1 tablespoon cornstarch

1 tablespoon nutritional yeast

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon Tabitha Brown all-purpose seasoning

1 teaspoon poultry seasoning (Bek uses Trader Joes', vegan chickenless seasoning)

½ teaspoon salt

½ teaspoon black pepper


Sauce Options:

  • Hot sauce, of course!

  • Vegan Buffalo sauce + vegan butter

  • BBQ sauce

  • Maple-sriracha

  • Garlic-parm (vegan butter + garlic + nutritional yeast)


Instructions

  1. Prepare the Tofu

    If not using super-firm tofu, press for 20–30 minutes until very firm. Cut into thick shapes.


  2. Marinate

    Mix all marinade ingredients in a bowl. Add tofu pieces and gently coat. Marinate for at least 30 minutes. Ideal: 1–2 hours, but best to leave it overnight for max flavor. Lightly pat the tofu (don’t wipe off the seasoning —leave it clinging).


  3. Make the Batter

    In a bowl, whisk together: flour, plant milk, cornstarch, nutritional yeast, spices, salt, and pepper. It should be pancake-batter thick.


  4. Coat the Drumsticks

    Dip each marinated tofu piece entirely in the batter. Let excess drip off. Roll in panko for extra crunch.


  5. Wrap with "Rice Paper" Skin

    Cut the rice paper in half or into strips, depending on the size of your tofu. Dip each strip into warm water for 1–3 seconds. Wrap around each battered tofu piece.

    You can pull a bit to get it night, and snug. It shrinks + crisps beautifully, like chicken skin.


  6. Air Fry or Bake

    - Air Fry: 400°F for 12–14 minutes, flipping halfway.

    - Oven: 425°F for 20–25 minutes, flipping once if needed.

    Look for: Golden edges, firm, crispy exterior.


  7. Sauce & Finish

    Toss with your sauce of choice. Eat "as is" it or... return to the air fryer or oven for 5–7 minutes to caramelize and glaze.
