"Cooking with Grace" Vegan Pesto

Ingredients

3/4 cup pine nuts - toasted for nuttier flavor, or substitute with cashews for a creamier/cheesier flavor (allergy-free: substitute with sunflower seeds)

2 ½ cups of basil leaves, packed

2 - 4 garlic cloves (roast in advance if you’d like)

2 tablespoons of nutritional yeast

2 tablespoons of vegan parmesan (you can also skip this and double up nutritional yeast)

2 tablespoons of freshly squeezed lemon juice, plus ½ teaspoon (or more) lemon zest

½ teaspoon salt

1/2 cup of extra virgin olive oil 

1/4 cup of water (or more)

Fresh ground pepper


Instructions

  1. Place all ingredients in a blender or a food processor, and viola!


Special Notes

  • Cook some pasta, top your pizza or mix in to your salad for some added flavor.

You can skip the nuts in this recipe but you can't skip how nuts we are for Mr. Walnuts
