Jalapeño Cornbread

Ingredients
1 1/4 cups all-purpose flour
1 cup yellow cornmeal
2/3 cup granulated sugar
1 teaspoon salt
1 tablespoon baking powder
1 1/4 cup unsweetened almond milk
1/3 cup canola oil or other neutral oil
2 medium-sized jalapeños
Instructions
Preheat the oven to 400℉
Lightly grease an 8 x 8 pan and line it with parchment paper
In a large bowl, combine the flour, cornmeal, sugar, baking powder, and salt and whisk it together evenly.
Pour in the almond milk and canola oil. Stir until it's well combined and with no lumps.
Core and chop the jalapeños
Fold in the jalapeños
Pour the cornbread batter into the prepared pan and smooth out with a spatula so it's even
Bake for approximately 20-25 minutes, until a toothpick in the center of the cornbread comes out clean. The top should look golden brown.
Special Notes
It's important to get good quality cornmeal. Bob's Red Mill has great and flavorful yellow cornmeal.
You can judge the size of how you want your jalapeño chopped -whether that's big chunks or little bits of jalapeño.
You can replace the jalapeños with any other mix-ins like fresh pieces of corn, vegan cheese, or other spicy peppers for a kick.
