Bean and corn cold salad recipe

Ingredients

1/2 can of black beans

1/4 cup of canned corn

3 cherry tomatoes

2 tablespoons of chopped red onion

Light salt (or skip salt)


DRESSING: Apple cider vinegar or balsamic vinegar to taste


Instructions

  1. Rinse off beans in a strainer or buy low-sodium black beans.

  2. Rinse off corn in a strainer or buy low-sodium sweet corn.

  3. Use sweet corn or corn of your choice, but no extra sugar. Plain corn is naturally sweet. Spread evenly over beans.

  4. Cut up cherry tomatoes. Spread evenly over beans.

  5. Spread chopped red onions over beans. Add more or less as desired.

  6. Add the apple cider or balsamic vinegar over the black beans in the dish. Add to taste.

  7. Lightly salt (Optional)
