Roasted Brussels Sprouts

Ingredients
1 small bag of frozen Brussels sprouts
1 cup frozen cranberries
1/2 cup orange juice
1 cup pecans
1/4 cup pure maple syrup
1/4 cup olive oil
1/2 cup balsamic vinegar
Salt and pepper to taste
Garlic powder to taste
Instructions
Put the Brussels sprouts, cranberries, orange juice, and a little bit of water in a pot. Bring to a boil then turn the heat down and cook until the Brussels sprouts are somewhat soft.Â
Strain the ingredients and place them on a cutting board. Once they are cool remove the stems and cut Brussels sprouts in half.
Put pecans in a frying pan without oil and cook on medium-high heat for about 8-10 minutes until they’re toasted. Do not leave these they can burn very easily. Turn them every few minutes. They will turn dark brown when they are toasted. Remove from the pan once they are toasted.
Put all of the ingredients in a bowl with the olive oil, vinegar, and salt and pepper and toss them until they’re all coated.
Put them on a sheet pan and roast them for about 30-45 minutes at 425℉.
Only turn them if they appear to be burning.  You will likely turn them about halfway through but keep watching them so they don’t burn.
Special Notes
This can be a meal or used as a side dish.
You can also put it on top of a bit of greens for a very large salad.
