St. Patrick's Day: Potatoes Colcannon (aka Irish Mashed Potatoes)

Ingredients
2 cups of chopped kale (You can use frozen squeezed dry kale)
2 cups of chopped green cabbage
4 Russet or Yukon Gold potatoes peeled and cubed
2 tablespoons of vegan butter
1/2 - 1 cups of warmed, unsweetened soy or almond milk
3 chopped scallions (green onions)
Salt and pepper to taste
Instructions
Bring a pot of water to a boil. Add cabbage and kale, blanch for 2 minutes, then remove the cabbage and kale with a slotted spoon. Now add the potatoes and a teaspoon of salt to the water. Bring back to a boil, then cover and simmer for 20 minutes until "fork" tender. Then drain and add the potatoes back to the empty pot.
Add the vegan butter to the potatoes and mash with a potato masher. Gradually add the warmed milk. Season with salt and pepper.
Add in the kale, cabbage, and mash all together.
Top with the scallions
