Spaghetti Squash Pad Thai

BAM! It's Compassionate Cooking Sundays!

Ingredients
1 spaghetti squash
1 teaspoon of minced ginger
1 tablespoon soy sauce or tamari
2 teaspoon of rice vinegar
1 tablespoon peanut butter (you can also use almond butter)
1 teaspoon of sriracha (or more to taste)
1 tablespoon lime juice
Red pepper flakes and chopped peanuts as garnish
Instructions
Cut the spaghetti squash in half, remove the seeds, and spray the flesh side with olive oil. Place the squash on a parchment-lined baking sheet with the flesh side down.
Bake for 1 to 2 hours or more, until you can easily insert a fork through the skin.
With a fork, shred the spaghetti squash into a bowl. In a separate bowl, whisk together the ginger, tamari, rice vinegar, peanut butter, sriracha, and lime juice. Pour that over the spaghetti squash and toss it all together, top with chili flakes, chopped peanuts, and a squeeze of lime!
