Sizzlin Soba Sesame Noodles

BAM! It's Compassionate Cooking Sundays!

Ingredients
1 package of soba noodles (or you can use shiritaki “skinny” noodles)
1 red pepper sliced thin
Half of an English cucumber sliced thin
1 cup sugar snap peas sliced on a bias
3 scallions thinly sliced on a bias
Dressing
2 tablespoons tahini (you can swap with peanut butter)
1 tablespoon low-sodium soy sauce or tamari
1 teaspoon of sesame oil
1 teaspoon diced red chili (if you like spicy)
1 teaspoon fresh ginger grated on a microplane
1 tablespoon of water
Juice of half a lime
1 tablespoon toasted sesame seeds
2 tablespoons chopped peanuts
Instructions
Simply prepare the noodles according to the package directions and set them aside.
Mix all the dressing ingredients in a bowl with a whisk or fork
In a large bowl, combine the cooked noodles, vegetables, and dressing, and give it a good toss. Plate, and top with sesame seeds and peanuts. You can also add some fresh cilantro.
