Charred Vegetable Grain Spring Salad


Ingredients

1 cup of wild or black rice

2 ears of corn

1 zucchini sliced 

1 bunch of asparagus

1/2 cup toasted walnuts

Arugula to line the plate with, and so the salad sits on a bed of lettuce


Instructions

  1. To make wild or black rice perfect every time, cook it like you are cooking pasta at first. Rinse the rice first. Bring a medium pot of salted water to a boil, and add your rice. Bring down to a simmer and let simmer for 40-50 minutes. and taste to your "chewy" liking. Then drain the rice, put it back in the pot, and cover the pot so the rice now steams for another 10 minutes. Then fluff with a fork! Transfer the rice to a bowl.

  2. Before charring the vegetables, toss them in a little avocado oil, salt, and pepper before cooking.

  3. Char the corn on the cob on a Blackstone or grill. Once charred, remove the corn from the cob and then char the sliced zucchini and asparagus.

  4. Toast walnuts in a dry skillet for just 5 minutes.

  5. Line the plate with arugula, and then add all the charred veggies and toasted walnuts to the rice. Drizzle with a little avocado or oil, and enjoy! You can also make a delicious and nutritious lemon dressing. The recipe is below.


Special Notes

Because the pasta boil method is recommended for cooking the rice, you can really make as much rice as you want, so the 1 cup measurement is approximate.


 

Lemon Dressing


Ingredients

1 lemon cut in half and charred for 5 minutes on your Blackstone or grill

2 tablespoons of Dijon mustard

1 tablespoon of maple syrup

1/4 teaspoon of pepper

Salt to taste

1/2 teaspoon of dried oregano

1 tablespoon olive oil


Instructions

Blend all the ingredients together to make your dressing. Do not use the skin of the lemon, but you can use the charred flesh of the lemon!
