Blueberry Pie Squares

Ingredients
Oat Topping
1 1/2 cups of all-purpose flour
1 cup of rolled oats
1/2 cup of sugar
1/3 teaspoon salt
3/4 cup of melted vegan butter
Blueberry Filling
4 1/2 cups fresh blueberries
1/2 cup of sugar
2 tablespoons cornstarch
3 teaspoons zest of a lemon
Instructions
Preheat your oven to 350℉
Line a 9-inch square pan with parchment paper.
In a large bowl, stir together the oats, flour, sugar, and salt. Add in the melted butter and stir until the mixture is crumbly.
Set aside 1 cup of the crumb mixture for the topping.
Press the remaining crumbs into the 9-inch pan, ensuring they are packed down and evenly distributed. Bake for 8 minutes, then set aside.
To make the blueberry filling, put the blueberries, sugar, cornstarch, and lemon zest in a saucepan. Simmer for about 5-8 minutes until the mixture starts to thicken.
Pour the blueberry mixture over the crust and spread it out so it's even. Top the blueberry filling with the oat crumbles.
Bake for 35-40 minutes, until lightly browned and the blueberry filling starts to bubble.
Cool for 25 minutes.
Special Notes
I prefer to have the parchment overhang so that you can remove the bars more easily.
