Black Bean Burgers

Ingredients

1 small cooked sweet potato (you will take the skin off)

1/2 of a red pepper diced

1 can of drained black beans

1 cup of button mushrooms, chopped

1/4 cup of chopped walnuts

1 tablespoon of tamari

1/2 teaspoon of smoked paprika

1/2 teaspoon of chili powder

1/2 cup of rolled oats

Salt and pepper to taste


Instructions

  1. Put all the above ingredients in a large bowl and, with a potato masher, fork, or your hands (my preference), combine to distribute evenly.

  2. Make four patties, and you can air-fry, pan-sear, grill, or bake in the oven at 350°F for 25 minutes.

  3. Top with caramelized onions, extra sautéed mushrooms, sliced avocado, BBQ sauce, or spicy mustard!

  4. Enjoy!
