Toasted Walnut & Chocolate Chip Banana Bundt Cake

Ingredients
Cake
1 1/2 cups of unsweetened almond milk
1 1/2 tablespoons of apple cider vinegar
3 cups of all-purpose flour
1 tablespoon of baking powder
1/2 teaspoon of baking soda
1 1/2 teaspoons of cinnamon
4-5 ripe bananas
3/4 cup of avocado or neutral oil
3/4 cup of unsweetened applesauce
2 cups of packed brown sugar
1 teaspoon of vanilla
1 cup chopped toasted walnuts
1/2 cup of dark or semi-sweet chocolate chips
Glaze
3 teaspoons of almond milk
1/2 cup powdered sugar
Instructions
Preheat oven to 350° Fahrenheit. Generously grease a bundt pan.
In a small bowl, combine almond milk and apple cider vinegar. Set aside for 15 minutes to make your vegan buttermilk.
Toast the walnuts in a dry skillet for about 5-7 minutes.
In a large bowl, whisk together flour, baking soda, baking powder, and cinnamon. Put aside.
In a large bowl, mash bananas with a fork or potato masher until there are no longer large chunks. Once you hit the fifteen-minute mark, add the vegan buttermilk, oil, applesauce, brown sugar, and vanilla when ready. Stir together until well combined.
Add dry ingredients to the wet ingredients in phases, mixing until just combined.
Fold in the walnuts and chocolate chips.
Add the cake batter to the greased bundt pan.
Bake for approximately 50 minutes until a toothpick comes out clean.
Glaze
Mix vegan milk with powdered sugar.
Stir well until a smooth glaze is formed.
You may have to add in a little more milk or powdered sugar until you get the consistency you like for your glaze.
Special Notes
For an even fluffier cake result, be sure to sift your dry ingredients.
You can use other nuts if you don't like walnuts or lose the nuts.
